Description & Tasting Notes

Naturally fermented using kiln-dried sea salt and filtered rainwater and finished with ALTO Lemon Oil and ALTO Chardonnay Vinegar. ALTO Kalamata selection features large thin-skinned fleshy olives – for many the supreme eating variety.

The Kalamata variety is named after a place in Greece and is the second most important Greek olive variety, which has adapted well to its high altitude home in Australia. The flesh is distinguished by its excellent texture, taste and aroma, and intense olive flavour retained by careful processing.
