Description & Tasting Notes

Monte Nardi is a cow milk cheese that pays tribute to the early Italian settlers of the Northern Rivers region; they began arriving at the beginning of last century from the Venuto region and surrounds of northern Italy, bringing their local cheese making skills with them. Derived from classic Italian cheeses such as the Asiago, the paste is a rich dark yellow. The natural rind is firm and dry with a dark yellow base with various light coloured volunteer moulds.

This cheese displays beautiful fresh milk flavours and the classic ‘grassiness’ that comes from using the milk of pasture fed cows. At 3
months the flavour is mild and sweet with a hint of caramel that becomes increasingly prominent and complex with age.


Other Notes & Serving Suggestions

The milk is sourced from pasture fed, free range Jersey and Friesian cows. They graze a summer pasture of kikuyu and tropical legumes, and a winter pasture of temperate rye grass, oats and herbs from May to late spring. Their diet is supplemented with up to 4kg of grain and rough hay each day. The milk is naturally free from antibiotics, growth promotants or hormones and GMOs.

Mont Nardi is an everyday farmhouse cheese traditionally always on the table at mealtimes. It can also be grated and grilled. It can be used to top pasta in a similar way to parmesan.
