Description & Tasting Notes

Affidelice [affiné (ripe) + delice (delight)], is a washed rind cow’s milk cheese from the Burgundy region of France similar in style to Epoisses – however, where-as Epoisses is washed with Marc de Bourgogne, Affidelice is washed with Chablis wine resulting in a slightly less assertive flavour.

Under the aromatic orange rind, the texture is creamy and soft, silky in appearance. The flavour is full and rich: an underlying creaminess supported by a bold pungency and slight fruity flavour.

 

Other Notes & Serving Suggestions

A stunning ‘feature cheese’ to serve on cheese boards – when very ripe it’s best to keep it in the box and let guests spoon it out. Serve with orange marmalade or glacé fruits or accompany this cheese with flavoured crackers – rosemary or fennel work well.

Pair with aromatic white wines and white dessert wines. Affidelice does have a very pungent aroma, and will make its presence known in your fridge.
